Brunswick Stew

Ingredients
  • 1 T. olive oil

  • 1 medium onion chopped

  • 1 pound boneless chicken breasts, skinned, all visible fat removed, and cut into 1 inch cubes

  • 1 1/2 cups chopped tomatoes

  • 1 6 ounce can no-salt added tomato paste

  • 10 oz. baby lima beans, fresh or frozen

  • 10 oz. corn kernels, fresh or frozen

  • 3 cups chicken stock (unsalted)

  • 1 T. Worcestershire sauce

  • 3 T. lemon juice

Directions
  1. In a deep skillet or dutch oven, heat oil over medium-high heat. Add onion and saute until soft, about 3 minutes. Add chicken pieces and remaining ingredients. Reduce heat to low, cover and simmer 1 hour.

  2. Makes 6, 1 1/2 cups servings.
