SPICED SWEET POTATO WEDGES

  • 5 SWEET POTATOES, PEELED 2EGG WHITES, WHIPPED AND FOAMY 1/2 tsp. GROUND GINGER 1/4 tsp. GROUND CINNAMON 1/8 tsp. GROUND NUTMEG 1/2 tsp. SALT

Directions
  1. PREHEAT THE OVEN TO 400. COAT 2 LARGE BACKING SHEETS WITH NON STICK COOKING SPRAY. SLICE EACH POTATO INTO 12 WEDGES. IN A LARGE BOWL, BEAT THE EGG WHITES,GINGER, CINNAMON, NUTMEG, AND SALT UNTIL FOAMY. ADD THE POTATOES AND TOSS TO COAT COMPLETLY; ARRANGE IN A SINGLE LAYER ON THE BAKING SHEETS. BAKE FOR 20 MINUTES, THEN TURN THE POTATO WEDGES AND BAKE FOR 15 TO 20 MORE MINUTES.

Te Ja, Recipesounds mouth watering. It has been just over the last year that I have started to use sweet potatoe in my diet. Just bought a couple last week. My foot is still swolllen mostly around the ankle, but it is not hurting as much. It feels like a tendon was affected and there are still a couple of areas that are very sore to the touch. I feel like such a wa wa but this is really a weird injury. My boot was a flopping toward last weekend, so I swithced it to a sandle and am wearing the brace on the leg. I still cannot get a shoe on comfortably, but time will heal. At least it is summer so I can wear sandals. I get it xrayed the 3rd of September again. My bones take a long time to heal and I just have to be careful. Many years ago, we were members of a CB club and my handle for the radio was " Butterfingers"! What does that tell you?
