Cubed Fish & Salsa (Microwave)

  • 2 Tablespoons olive oil

  • 1 Tablespoon lemon juice

  • 1 clove garlic, quartered

  • 1/4 teaspoon crushed basil leaves

  • 1 lb. firm-textured fish fillets (cod, swordfish, halibut)

  • salt & pepper

  • 1/2 cup favorite salsa

  1. Combine oil, lemon juice, garlic, and basil in a plastic bag. Cut fish inti 1 inch pieces. Add to oil mixture in bag. Turn to coat evenly. Close bag and refrigerate 1 hour.

  2. Remove fish from marinade. Thread on microwave safe kabob holders. Place across 12 X 8 inch baking dish. Cover with waxed paper.

  3. Microwave (high) 4 1/2 to 5 minutes or until fish flakes apart easily with fork, rearranging kabobs and brushing once with additional marinade. Sprinkle with salt & pepper. Serve with salsa.
