Zippy Breaded Fish Fillets (Miacrowave)

  • 1/3 cup dry bread crumbs

  • 2 tablespoons parmesan cheese

  • 1/4 teaspoon dill weed

  • 1/4 teaspoon paprika

  • 1/8 teaspoon garlic powder

  • 1/2 cup lemon-flavored yogurt (4oz.)

  • 1 lb. favorite fish fillets

  1. Combine bread crumbs, parmesan cheese, dill weed, paprika, and garlic powder on waxed paper; mix well. Spoon yogurt into a shallow dish. Cut fillets into serving size pieces. Dry each with paper toweling. Dip fillets, one at a time, into yogurt and then into crumbs, coating evenly. Place in 12 X 8 inch microwave safe baking dish. Cover with paper tpweling.

  2. Microwave (high) 4 1/2 to 5 minutes or until fish flakes apart easily with a fork, rotating dish once. If desired, serve with additional yogurt.

I wonder how that recipe would work with almond meal instead of a wheat based breading (staying away from wheat).

For even easier preparation, place fillets in layer in baking dish. Spread with yogurt and sprinkle with crumbs. Microwave as directed.

For half a recipe, use half of the ingredients in an 8 inch round or square baking dish. reduce time to 2 1/2 to 3 minutes.
