Broiled Salmon with Creamy Lemon Sauce

Ingredients
  • 1 tablespoon extra virgin olive oil

  • 1 clove garlic, minced

  • 1/4 cup lemon juice

  • 2 tablespoons capers

  • 1 teaspoon lemon-pepper seasoning

  • 1/2 cup fat-free sour cream

  • 1 1/2 pounds salmon filet

Directions
  1. Preheat oven to 350 degrees. Coat a baking sheet with non-stick cooking spray.

  2. Heat the oil in a small saucepan over medium heat. Add the garlic and cook for 1 minute. Reduce heat to low. Stir in the lemon juice, capers, and lemon-pepper seasoning and cook for 5 minutes. Add the sour cream and cook for 5 minutes, or until heated through.

  3. Meanwhile, place the salmon on the prepared baking sheet. Bake 20 minutes, or until fish is just opaque. serve with the sauce.
