Mixed Greens with Creamy Poppy Seed Dressing

Ingredients
  • Dressing

  • 1/2 cup fat-free plain yogurt

  • 2 tablespoons orange juice

  • 2 teaspoons poppy seeds (lightly toasted)

  • 1/2 teaspoon apple cider vinegar

  • pinch of ground black pepper

  • Salad

  • 1 head red leaf lettuce, coarsely torn

  • 1 bunch watercress

  • 1 cup cherry tomatoes (halved)

Directions
  1. To make Dressing: In a small bowl, whisk together the yogurt, orange juice, poppy seeds, vinegar, and pepper.

  2. To make the salad: In a salad bowl, combine the lettuce, watercress, and tomatoes. Add the dressing and toss gently.
