Sugar Free, Naturally Sweetened, Low Glycemic Index Chocolate Bars

  • 4oz Ghirardelli 100% cacao baking chocolate.

  • 3-5 tsp Truvia sweetener (erythritol for the Stevia plant) depnding on sweetness desired.

  • Nuts if desired

  1. Melt the chocolate in a double boiler. I just put a metal bowl on top of a pot of boiling water. Chocolate melts in about 5 minutes,

  2. Sprinkle and stir in the Truvia slowly about a 1/4 tsp per sprinkle. The Truvia is crystalline and a little crunchy if you don't give it time to dissolve.

  3. Fold a piece of foil to make it double-thick then fold up the edges to make a form to pour the melted chocolate into. Make it about the size of the chocolate bar but with higher edges (about 1/2 inch).

  4. Use a spatula to help pour about half the melted chocolate into the form.

  5. Add nuts if desired.

  6. Pour in the rest of the chocolate to cover nuts .

  7. Place in freezer for about 15 minutes (I usually slide the foil form onto a plate for stability).

  8. Remove from freezer and ENJOY!

  9. TASTY, TASTY, TASTY and about as healthy a chocolate bar as you can eat.

Sugar is problematic and many artificial sweeteners still have significant glycemic index and cause gastrointestinal problems. Here is a recipe for making a healthy chocolate bar using a natural low glycemic index sweetener.
