Italian Tuna Salad

Ingredients
  • 1 can (15 ounces) cannelini beans, rinsed and drained

  • 1 medium sweet red pepper, chopped

  • 1 medium green pepper, chopped

  • 1 small red onion, chopped

  • 1 celery rib, chopped

  • 1/4 cup sliced green onions

  • 1/4 cup sliced stuffed olives

  • 1/4 cup sliced ripe olives

  • 2 garlic cloves, minced

  • 2 tablespoons minced fresh parsley

  • 1 cup fat-free Itailian salad dressing

  • 2 cans (6 ounces each) low-sodium tuna, drained and flaked

Directions
  1. In a large bowl, combine the first 10 ingredients. Add dressing and toss to coat. Fold in tuna. Cover and refrigerate for at least 1 hour before serving.

  2. Yields: 16 servings.

I love tuna love it love it I could eat it every day. I am going to have to try this one.

Hmmm…sounds like the stuffed olives will make up for the low-sodium tuna. But it sounds yummy!
