Yummy Zucchini and Onions

Ingredients
  • 2 tablespoons vegetable oil

  • 1 medium onion, thinly sliced

  • 1 garlic clove, minced

  • ~ 1inch ginger, minced

  • 2 medium zucchinis, cut into thin strips

  • 2 1/2 tablespoons (low sodium) teriyaki sauce

  • 1 tablespoon (low sodium) soy sauce

  • 1 tablespoon toasted sesame seeds

  • ground black pepper to taste

Directions
  1. Warm the oil in a large skillet over medium heat. Stir in onions, garlic and ginger and cook 5 minutes.

  2. Add zucchini, and cook, stirring, about 1 minute.

  3. Stir in teriyaki sauce, soy sauce, and sesame seeds. Cook until zucchini is tender, about 5 minutes. Stir in ground pepper, and serve immediately.
