Avocado-Bowl Salad

Ingredients
  • 2 teaspoons balsamic vinegar

  • 1 teaspoon olive oil

  • 1 clove garlic, minced

  • 1/4 cup halved cherry tomatoes

  • 1/4 cup sliced celery

  • 2 tablespoons thinly sliced green onion

  • 1 medium avocado, halved, seeded, and peeled

Directions
  1. In a small bowl, whisk together vinegar, oil, garlic, 1/8 teaspoon salt, and 1/8 teaspoon black pepper. Stir in tomatoes, celery, and green onion.

  2. Place each avocado half on a salad plate, cut side up. Spoon tomato mixture over avocados.

  3. Serve immediately.

  4. Serving size: 1 avocado half and 1/3 cup filling
